Ingredients
- 2 1/4 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup peanut butter, softened
- 1/2 cup unsalted butter, softened
- 1/2 cup white granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Optional: chopped peanuts or chocolate chips for added flavor and texture
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium-sized bowl, whisk together the flour, oats, baking soda, and salt.
Set aside.
In a large bowl, cream together the peanut butter and butter until smooth and creamy. Add the white granulated sugar and brown sugar to the peanut butter mixture and beat until well combined.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually mix in the flour mixture until just combined, being careful not to overmix. If desired, stir in chopped peanuts or chocolate chips for added flavor and texture.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Yield: 8 cookies
Notes
For a crisper cookie, bake for 12 minutes. For a chewier cookie, bake for 10 minutes.
To ensure soft and puffy cookies, do not overmix the dough.
If adding chopped peanuts or chocolate chips, fold them in gently to avoid crushing. For a more pronounced peanut butter flavor, use natural peanut butter instead of processed.
To store, place cookies in an airtight container at room temperature for up to 5 days.
