Ingredients
- 1 1/2 sticks unsalted butter at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, cream together the butter and peanut butter until smooth and creamy.
You might need to stop the mixer and scrape down the sides a few times to get everything fully incorporated. In a separate bowl, whisk together the granulated sugar and brown sugar.
Add this sugar mixture to the peanut butter mixture and beat until well combined.
Beat in the egg and vanilla extract until smooth. In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Stir in those delicious chocolate chips! Scoop tablespoon-sized balls of dough onto your prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 10-12 minutes, or until the edges are lightly golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
Use room temperature butter for a better texture and consistency in your cookies. Don’t overmix the dough, as it can lead to tough cookies.
If you find your dough too sticky, refrigerate it for about 30 minutes to firm it up before baking.
