Ingredients
- 2 cups peaches, diced
- 1/4 cup habanero peppers, seeded and chopped
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon butter
- parchment paper
Instructions
Preheat your oven to 350°F (180°C).
Line a baking sheet with parchment paper.
In a medium-sized bowl, mix together the diced peaches, chopped habanero peppers, granulated sugar, and lemon juice.
Let it sit for about 15-20 minutes, until the peaches start to release their juice and the mixture becomes syrupy.
Transfer the mixture to a 9×13 inch baking dish and dot the top with butter.
Bake for 30-35 minutes, or until the mixture has thickened and the fruit is tender.
Remove the baking dish from the oven and let it cool slightly.
Use an immersion blender or a regular blender to puree the mixture until smooth.
Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the jam has thickened to your liking.
Remove the jam from the oven and let it cool completely before transferring it to an airtight container.
Store it in the fridge for up to 6 months or in the freezer for up to a year.

Notes
Use fresh, ripe peaches for the best flavor.
You can also use canned peaches as a substitute if fresh ones are not in season.
If you like a milder jam, use only one habanero pepper or substitute in some milder peppers.
If you like it super spicy, add in more habaneros or other hot peppers to taste.
You can adjust the amount of sugar to your taste, but keep in mind the jam will thicken more as it cools.
To test the jam’s consistency, place a small spoonful on a chilled plate.
Let it cool to room temperature, then gently push the jam with your finger.
If it’s too runny, bake for a few more minutes.
If it’s too thick, you can thin it out with a little water.
Let the jam cool completely before transferring it to an airtight container to ensure it sets properly and doesn’t develop off-flavors.
You can use this jam on toast, as a glaze for meats or cheeses, or as a topping for yogurt or ice cream.
It also makes a great gift!
