  • 375g plums, chopped
  • 250g granulated sugar
  • 250ml water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

Rinse the chopped plums and remove any stems or leaves. In a large saucepan, combine the plums, granulated sugar, water, ground cinnamon, ground cloves, and salt.

Bring the mixture to a boil over high heat, stirring occasionally.

Reduce the heat to medium-low and simmer, uncovered, for about 20-25 minutes or until the plums are soft and the mixture has thickened. Mash the plums with a potato masher or blend a little with an immersion blender to your desired consistency.

Stir in the lemon juice.

Continue simmering for another 10-15 minutes, or until the jam has thickened and passed the “wrinkle test”. Remove the saucepan from heat and let the jam cool slightly before transferring it to an airtight container.

Store it in the fridge for up to 6 months or in the freezer for up to a year.

Notes

You can use other types of stone fruits like peaches or nectarines as a substitute for plums, but keep in mind they might change the flavor profile.

Don’t over-mix the jam after adding the lemon juice, as it can cause it to become too thick and sticky.

To ensure the jam has thickened properly, perform the “wrinkle test”: place a small spoonful of the jam on a plate, let it cool to room temperature, and gently push the jam with your finger.
