Ingredients
- all-purpose flour 1 1/4 cups, granulated sugar 1 1/2 cups, unsalted butter softened 1/2 cup, large eggs 2, plain Greek yogurt 1/2 cup, orange zest 2 tablespoons, freshly squeezed orange juice 2 tablespoons, vanilla extract 1 teaspoon, baking powder 1 1/2 teaspoons, salt 1/4 teaspoon.
Instructions
Preheat your oven to 350°F (180°C).
Grease two 8-inch round cake pans and line the bottoms with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
Set aside.
In a large bowl, use an electric mixer to beat the sugar and butter until light and fluffy, about 2 minutes.
Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
In another bowl, whisk together the Greek yogurt, orange zest, orange juice, and vanilla extract.
Gradually add the flour mixture to the sugar mixture, alternating with the yogurt mixture, beginning and ending with the flour mixture.
Beat just until combined.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use high-quality, fresh oranges for the best flavor. Don’t skip the orange zest – it adds a lovely brightness to the cake.
Make sure to grease those pans well, as the cake can stick.
If you’re making this cake ahead, store it in an airtight container at room temperature for up to 2 days or freeze for up to 2 months. You can also use buttermilk instead of Greek yogurt for a tangier flavor.
Don’t overmix the batter, as it can lead to a dense cake.
