- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, softened
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
Preheat the microwave to 350°F (180°C). In a large mixing bowl, whisk together the eggs, sugar, and vanilla extract until well combined.
Add the softened butter and whisk until smooth.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until smooth.
Pour the batter into a greased microwave-safe mug or ramekin.
Place the mug in the microwave and cook on high for 1-2 minutes, or until the cake is cooked through and a toothpick inserted comes out clean. Remove the cake from the microwave and let it cool for a minute.
Run a knife around the edges to loosen the cake, then invert onto a plate.
Serve warm and repeat the process to make 6 more cakes, as this recipe yields 7 servings.
Notes
Use any microwave-safe mug or ramekin that can hold about 1 cup of batter, as the cake will rise during cooking. Make sure to grease the mug or ramekin well to prevent the cake from sticking.
If you don’t have unsalted butter, you can use salted butter instead, just omit the additional teaspoon of salt.
If you want a moist and gooey center, cook the cake for 1 minute and 15 seconds, then check if it’s cooked to your liking. You can customize the recipe by adding a teaspoon of cocoa powder for a chocolate cake or some chopped nuts for added texture.
