Martian Cookies
Martian Cookies are out-of-this-world delicious! They are perfect for a Halloween party or any other time you want to make something special. These cookies are made with almond flour, so they are gluten free and have a wonderful nutty flavor. The Martian Cookie recipe is easy to follow and the results are truly amazing.
Ingredients
- -1/2 cup butter
- -3/4 cup white sugar
- -1 egg
- -1/2 teaspoon vanilla extract
- -1 1/2 cups all purpose flour
- -1 teaspoon ground cinnamon
- -1/2 teaspoon baking soda
- -1/4 teaspoon salt
- -1 cup quick cooking oats
- -3/4 cup grated zucchini
- -3/4 chopped walnuts
- -6 tablespoons semisweet chocolate chips (or to taste) – reserve 2 tablespoons for topping the cookies if desired ½ cup butterscotch chips
Instructions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large mixing bowl beat butter until soft, add sugar, and beat until fluffy. Add egg and vanilla, beat well.
3. In a medium bowl stir together flour, cinnamon, baking soda, and salt. With mixer on low speed, gradually add four mixture to butter mixture, beat until well mixed.
4 With a wooden spoon, stir in oats, zucchini walnuts or pecans chocolate chips and butterscotch pieces if desired.
5 Drop by rounded teaspoons about 2 inches apart onto ungreased cookie sheets
6 Bake for 10-12 minutes or until golden brown
7 Cool sheets then cookies on wire racks
