Ingredients
- For the crust:
- 1 1/2 sticks unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- For the cheesecake layer:
- 12 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- For the chocolate layer:
- 1 cup semisweet chocolate chips
- 1 tablespoon shortening
Instructions
Preheat your oven to 350°F (175°C).
Line an 8-inch square baking pan with aluminum foil, leaving some overhang for easy removal.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the flour and salt, and mix until a dough forms.
Press the dough evenly into the prepared baking pan.
Bake the crust for 20-25 minutes, or until it’s lightly golden brown.
Let it cool completely.
In another large bowl, beat the softened cream cheese until smooth.
Add the granulated sugar and beat until combined.
Beat in the eggs one at a time, followed by the vanilla extract.
Pour the cheesecake layer over the cooled crust and smooth the top.
Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
Remove from heat and stir in the shortening until combined.
Pour the chocolate layer over the cheesecake layer and smooth the top.
Refrigerate the bars for at least 4 hours or overnight.
Cut into 8 bars and serve.
Notes
Make sure to use softened butter and cream cheese for a smooth and creamy texture. Don’t overbake the crust, as it’ll continue to set while it cools.
To ensure a smooth cheesecake layer, make sure to beat the cream cheese until it’s completely smooth before adding the sugar and eggs.
If using a microwave to melt the chocolate, be careful not to overheat, which can cause the chocolate to seize up. To get a clean, marbled look, make sure to pour the chocolate layer over the cheesecake layer quickly, before it starts to set.
For a clean cut, refrigerate the bars overnight and use a sharp knife to slice them.
