  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup dark rum (optional)


Preheat your oven to 350°F (175°C) and grease two 9-inch (23cm) round cake pans. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Beat in those 4 large eggs one at a time, making sure each egg is fully incorporated before adding the next.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the whole milk, beginning and ending with the dry ingredients.

Beat just until combined.

Stir in the pure vanilla extract, chopped pineapple, chopped pecans, and brown sugar. If you’re feeling extra festive, stir in that 1/4 cup of dark rum (if using).

Divide the batter evenly between the prepared pans and smooth the tops.
