  • 1 can (10 oz.) of red enchilada sauce
  • 6 medium flour tortillas
  • 1 cup of shredded Monterey Jack cheese
  • 1 cup of shredded cheddar cheese
  • Sour cream, for serving (optional)
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  • Preheat your oven to 375 degrees Fahrenheit.
  • In a large skillet, cook the onion and garlic over medium heat for about 5 minutes until the onion is softened.
  • Add in the cooked chicken, cumin, chili powder, paprika, and salt and pepper to taste. Stir the ingredients together and cook for an additional 5 minutes.
  • Grease a 9×13 inch baking dish.

  • Take one flour tortilla and spoon 1/3 cup of the chicken mixture onto the center. Sprinkle a tablespoon each of the Monterey Jack cheese and cheddar cheese over the top. Roll the tortilla up and place it in the baking dish. Repeat this step with the remaining tortillas.
  • Pour the remaining enchilada sauce over the rolled up tortillas and sprinkle the remaining cheese over the top.
  • Place the baking dish in the preheated oven and bake for 30 minutes.
  • After 30 minutes, remove the baking dish from the oven and let it cool for 15 minutes.
  • Serve warm with a dollop of sour cream and some chopped fresh cilantro. Enjoy!
