Limber De Coco
This tropical treat is a refreshing escape from the ordinary.
Limber de Coco is a creamy, sweet, and utterly divine pudding-like dessert that combines the richness of coconut with the subtlety of vanilla.
It’s a taste of the Caribbean in every creamy, dreamy bite.

Ingredients
- 1 1/2 cups young coconut water
- 1/2 cup sweetened condensed milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 2 tablespoons unsweetened shredded coconut
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
Combine the coconut water, sweetened condensed milk, heavy cream, and granulated sugar in a blender or food processor. Blend on high speed until the sugar is fully dissolved, about 30 seconds.
Add the unsweetened shredded coconut, salt, and vanilla extract to the blender or food processor.
Blend on high speed until the coconut is well combined and the mixture is smooth, about 1 minute. Taste and adjust the sweetness and flavor as needed.
You can add more sugar if you prefer it sweeter, or more coconut water if you prefer it lighter.
Pour the mixture into 6 small glasses or cups. Cover each glass with plastic wrap, pressing the wrap directly onto the surface of the mixture to prevent a skin from forming.
Refrigerate for at least 2 hours or overnight until chilled and set.
Serve chilled, garnished with additional unsweetened shredded coconut if desired.
Notes
You can use fresh coconut water straight from a young coconut, but if you can’t find one, you can also use packaged coconut water from the store.
Make sure to shake the package well before opening.
If you prefer a stronger coconut flavor, you can add more unsweetened shredded coconut or even some shredded coconut flakes on top of the Limber De Coco before serving.
This dessert is perfect for warm weather since it’s so refreshing and light.
You can also make it ahead of time and store it in the fridge for up to 3 days.
If you want a creamier Limber De Coco, use more heavy cream and less coconut water.
If you want a lighter version, use more coconut water and less heavy cream.
Experiment with the ratio to find your perfect balance! You can also add a splash of rum or coconut rum for a grown-up twist on this traditional Puerto Rican dessert.
