  • 1 1/2 cups pitted dates, sliced into 1-inch strips
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1 tablespoon grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup confectioners’ sugar

Instructions

Line a baking sheet with parchment paper or a silicone mat. In a medium saucepan, combine sugar, corn syrup, and water.

Place the saucepan over medium heat, stirring until the sugar has dissolved.

Bring the mixture to a boil, then reduce the heat to medium-low and simmer for about 5 minutes, or until the mixture reaches 250°F on a candy thermometer. Remove the saucepan from the heat and stir in the lemon zest, lemon juice, and salt until well combined.

Let the mixture cool slightly, until it reaches 200°F.

Add the sliced dates to the saucepan and toss until they are evenly coated with the sugar mixture. Let the dates cool and set at room temperature for at least 30 minutes.

Once set, roll the dates in confectioners’ sugar to coat.

Place the coated dates on the prepared baking sheet, leaving about 1 inch of space between each date. Drizzle the dates with any remaining sugar mixture and sprinkle with a pinch of confectioners’ sugar.

Let the dates set at room temperature for at least 30 minutes before serving.
