Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup melted unsalted butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups pecan halves
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
Instructions
Preheat your oven to 350°F (180°C). In a medium bowl, whisk together the flour, salt, and baking soda.
Set aside.
In a large bowl, whisk together the sugar, corn syrup, and melted butter until well combined. Beat in the eggs until smooth, then stir in the vanilla extract.
Add the flour mixture to the sugar mixture, whisking until just combined.
Stir in the pecan halves until they’re evenly coated with the mixture. Roll out the dough on a lightly floured surface to a thickness of about 1/8 inch.
Transfer the dough to a 9-inch pie dish, trimming any excess dough from the edges.
Pour the pecan mixture into the pie crust, spreading it out evenly. Bake for 45-50 minutes or until the filling is set and the crust is golden brown.
Remove from oven and let cool on a wire rack for at least 2 hours before serving.
Notes
Make sure to toast your pecans in a 350°F oven for 5-7 minutes, or until fragrant and lightly browned, before chopping them for the best flavor.
If you want a more golden crust, brush it with a beaten egg and sprinkle with sugar before baking.
Don’t overmix your dough, or you’ll end up with a tough crust – stop whisking as soon as everything is just combined.
Keep an eye on your pie in the last 10 minutes of baking, and cover the edges with foil if they start to get too brown.
Let your pie cool completely before serving, or it’ll be runny in the center – patience is key! If you want to get fancy, whip up some whipped cream or vanilla ice cream to serve on top.
