Yields

Ingredients
- 2 cups rolled oats
- 1 cup chopped nuts (walnuts or almonds)
- 1 cup dried fruit (cranberries or cherries)
- 1/2 cup honey
- 1/4 cup brown rice syrup
- 1/4 cup peanut butter
- 1/4 cup chopped dark chocolate or chocolate chips
- 1/4 cup puffed rice cereal
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
Instructions
Combine the oats, nuts, and dried fruit in a large mixing bowl. Stir until well combined.
In a medium saucepan, heat the honey, brown rice syrup, and peanut butter over low heat, stirring frequently, until smooth and well combined.
Remove the saucepan from the heat and stir in the chopped dark chocolate or chocolate chips until melted and smooth. Add the puffed rice cereal, salt, and vanilla extract to the saucepan and stir until well combined.
Pour the saucepan mixture over the oat mixture and stir until everything is well coated.
Press the mixture into a lined or greased 8×8 inch baking dish. Refrigerate for at least 30 minutes to set.
Cut into 10 bars.
Notes
Use old-fashioned oats for a more rustic texture or instant oats for a finer texture.
Walnuts give a richer flavor, while almonds provide a lighter taste.
Dried cranberries add a tartness, whereas cherries offer natural sweetness.
You can customize the dried fruit to your taste preferences! For a chewier bar, use more honey and brown rice syrup.
If you prefer a crunchier bar, add more puffed rice cereal.
You can also add a sprinkle of sea salt on top of the bars before refrigerating for an extra burst of flavor.
If using chocolate chips, stir frequently while melting to prevent burning.
Pressing the mixture into the baking dish can be a bit tricky, so make sure to press firmly and evenly to avoid crumbling.
Cut the bars into desired sizes, depending on your snacking needs.
These bars are perfect for on-the-go energy or as a post-workout treat.
You can also wrap individual bars in plastic wrap or aluminum foil for easy storage and transport.
