Oat Bars Recipe

Soft, chewy, and utterly delicious, these bars are packed with rolled oats, brown sugar, and a hint of vanilla.

Ingredients

  • 2 1/4 cups rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (180°C) and line an 8×8-inch baking dish with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

Set aside.

In a large bowl, use an electric mixer to cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the vanilla extract until well combined.

Gradually add the oats to the wet ingredients, mixing until well combined.

Add the flour mixture and mix until just combined.

Press the mixture evenly into the prepared baking dish.

Bake for 20-25 minutes, or until the edges are lightly golden brown.

Remove from the oven and let cool completely before cutting into bars.

Cut into 4 equal-sized bars and serve.

Notes

These oat bars are perfect for a quick breakfast or snack on-the-go, and they’re also a great option to pack in lunchboxes or for after-school snacks. Make sure to use rolled oats for this recipe, as steel-cut oats or instant oats won’t give you the right texture.

If you want a crunchier oat bar, bake for the full 25 minutes.

If you prefer a chewier bar, bake for 20 minutes. To ensure clean cutting, refrigerate the oat bars for about 30 minutes before cutting into bars.

This will help them set and make them easier to cut.

You can customize these oat bars by adding in nuts, seeds, or dried fruit to suit your taste preferences. Keep in mind that the oat bars will be soft when you first take them out of the oven, but they’ll firm up as they cool.

Be patient and let them cool completely before cutting into bars!
