Ingredients

  • 2 1/4 cups all-purpose flour

  • 2 large eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons pure vanilla extract

Instructions

Preheat your waffle iron according to the manufacturer’s instructions.

In a large mixing bowl, whisk together the flour, baking powder, and salt.

Set aside.

In another bowl, whisk together the sugar, eggs, milk, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Do not overmix.

The batter should still be slightly lumpy.

If there are too many lumps, give it a few more stirs.

Pour about 1/4 cup of batter onto the center of the waffle iron and spread it evenly to fill the iron.

Cook for 3-5 minutes, or until the waffles are golden brown and crispy.

Repeat with the remaining batter, greasing the waffle iron with cooking spray or oil as needed to prevent sticking.

Serve the waffles hot with your favorite toppings, such as fresh fruit, whipped cream, or syrup.

Notes

Use buttermilk instead of regular milk for a tangier flavor. If you don’t have buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar or lemon juice and let it sit for 5-10 minutes.

Use high-quality vanilla extract for the best flavor.

You can also substitute with almond extract for a different twist. Don’t overmix the batter, as this will create dense waffles.

Stop stirring when the wet and dry ingredients are just combined.

If your waffle iron is non-stick, you might not need to grease it. But if you’re unsure, it’s always better to err on the side of caution and use some cooking spray or oil.

You can make the batter ahead of time and store it in the fridge for up to 2 days.
