Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk, at room temperature
  • 1 cup Harvey Wallbanger cocktails (or substitute with Galliano liqueur and vodka)
  • Confectioners’ sugar, for dusting

Instructions

Preheat your oven to 350°F (180°C) and grease two 9-inch round cake pans.

Line the bottoms with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking powder, and salt.

Set aside.

In a large mixing bowl, use an electric mixer to beat the butter until it’s creamy, about 2 minutes.

Gradually add the sugar and continue beating until light and fluffy, about 3 minutes.

One at a time, beat in the eggs, allowing each egg to fully incorporate before adding the next.

Beat in the vanilla extract.

With the mixer on low speed, gradually add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour mixture.

Beat just until combined.

Stir in the Harvey Wallbanger cocktails (or Galliano liqueur and vodka) until well combined.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 35-40 minutes, or until a toothpick inserted into the center of each cake comes out clean.

Remove from the oven and let cool in the pans for 10 minutes.

Transfer the cakes to a wire rack to cool completely.

Once the cakes are completely cool, you can frost and decorate them as desired.

Dust with confectioners’ sugar before serving.

Notes

Use high-quality flour for the best results. Don’t overmix the batter, as it can lead to a dense cake.
