Instructions

Start by cooking the diced potatoes in boiling salted water until they’re tender, about 10-12 minutes.

Drain the potatoes and set them aside.

In a large skillet, heat the olive oil over medium-high heat.

Add the diced onion and cook until it’s translucent, about 3-4 minutes.
