- 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup peach jam
- 2 tablespoons olive oil
- 1/4 cup honey
- 1 tablespoon Dijon mustard
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe peaches, diced
- 2 cloves garlic, minced
- Fresh parsley, chopped (optional)
Instructions
Preheat your grill to medium-high heat.
In a large bowl, whisk together olive oil, honey, Dijon mustard, grated ginger, salt, and black pepper.
Add the chicken pieces and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Remove the chicken from the marinade, letting any excess liquid drip off.
Grill the chicken for 5-7 minutes per side, or until cooked through.
Transfer the chicken to a plate and cover with foil to keep warm.
In a blender or food processor, puree the peach jam, diced peaches, and garlic until smooth.
Brush the peach sauce over the grilled chicken and serve hot, garnished with chopped parsley if desired.
Notes
To take the peach sauce to the next level, use fresh ripe peaches for the best flavor.
If you can’t find ripe ones, you can use canned peaches in syrup as a substitute, but the flavor won’t be as vibrant.
Don’t overcrowd the grill, cook the chicken in batches if necessary, to ensure it cooks evenly and gets those nice grill marks.
If you’re preparing this recipe ahead, store the peach sauce in an airtight container in the fridge for up to 2 days.
