- 4 cups beef broth
- 8 oz fideo noodles
- Shredded cheese, for serving (optional)

Instructions
In a large pot or Dutch oven, brown the beef or chicken over medium-high heat, about 5 minutes.
Drain excess fat.
Add the chopped onion, minced garlic, chopped carrot, and chopped celery to the pot.
Cook until the vegetables are tender, about 5-7 minutes.
Stir in the diced tomatoes, red kidney beans, ground cumin, dried oregano, and ground cayenne pepper.
Cook for 1-2 minutes.
Add the beef broth to the pot, bringing to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes or until the flavors have melded together.
While the soup is simmering, cook the fideo noodles according to package instructions and set aside.
Season the soup with salt and pepper to taste.
To serve, place some noodles in a bowl, ladle the hot soup over the noodles, and top with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro, if desired.
