Ingredients

  • 2 cups oyster mushrooms, cleaned and torn into small pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat your oven to 425°F (220°C). In a large bowl, toss the mushroom pieces with the olive oil, butter, onion, garlic, thyme, salt, and pepper until they’re evenly coated.

Spread the mushroom mixture out in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 20-25 minutes, or until the mushrooms are tender and golden brown, flipping them halfway through. Remove the mushrooms from the oven and let them cool slightly before serving.

Serve hot, dividing the roasted mushrooms among 6 people.

Notes

For the best flavor, use fresh thyme instead of dried if possible. Don’t overcrowd the baking sheet, as this can prevent the mushrooms from roasting evenly.

If using a convection oven, reduce the cooking time by 5-7 minutes.

You can also add a sprinkle of grated Parmesan or breadcrumbs to the mushroom mixture for extra flavor. To make ahead, prepare the mushroom mixture and refrigerate or freeze until ready to roast.
