Ingredients
- 1 1/2 cups granulated sugar
- 1/2 cup water
- 1/4 cup loose-leaf Earl Grey tea leaves
- 1 cup freshly squeezed lime juice
- 1/2 cup whole milk
- Ice pop molds
Instructions
Start by combining the sugar and water in a medium saucepan, whisking until the sugar is dissolved. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 5 minutes, or until the syrup has thickened slightly.
Remove the syrup from the heat and add the loose-leaf Earl Grey tea leaves.
Let it steep for 5-7 minutes, or until the tea has infused and the syrup has cooled slightly. Strain the syrup through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
Discard the tea leaves.
Whisk in the freshly squeezed lime juice and whole milk until well combined. Taste and adjust the sweetness and flavor to your liking.
Pour the mixture into ice pop molds, leaving about 1/4 inch of space at the top.
Insert sticks and freeze for at least 4 hours or until frozen solid. To unmold, run the ice pops under warm water for a few seconds and gently pull out the pops.
Serve immediately and store any leftovers in an airtight container in the freezer for up to 3 months.

These ice pops are perfect for warm weather – the Earl Grey and lime flavors are so refreshing! Make sure to not over-steep the tea leaves, or the flavor might become bitter.
You can adjust the amount of lime juice to your taste – if you prefer a stronger lime flavor, add a bit more! If you don’t have loose-leaf tea leaves, you can use tea bags instead, just be sure to adjust the steeping time.
For a creamier ice pop, use more whole milk.
