Ingredients

  • 1 pound dried corned beef, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups diced boiled potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

Start by dicing the corned beef into small pieces and set it aside. Chop the large onion into small pieces and mince the 3 cloves of garlic.

In a large skillet, heat the olive oil over medium-high heat.

Add the diced onion and sauté until it’s translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, making sure not to burn it.

Add the diced corned beef to the skillet and cook for about 5 minutes, breaking it up with a spoon as it cooks.

Add the diced boiled potatoes, salt, black pepper, and paprika to the skillet. Stir everything together and cook for an additional 5-7 minutes, breaking up any large chunks of potatoes as you go.

Continue cooking and stirring until everything is well combined and the potatoes are crispy on the outside and tender on the inside.

Divide the Corned Beef Hash into 6 servings and serve hot.

Notes

Use leftover boiled potatoes for this recipe to save time. Make sure to not overcook the garlic to avoid a bitter flavor.

If using leftover corned beef, make sure it’s fully thawed before dicing.

To get crispy potatoes, don’t overcrowd the skillet and stir occasionally. For a spicy kick, add a pinch of cayenne pepper to the mixture.

You can also serve this dish with eggs, toast, or as a side dish.

If you want a more intense flavor, add a tablespoon of Worcestershire sauce to the skillet. Reheat leftovers in a skillet with a little oil to crisp up the potatoes.
