Ingredients

  • 1 1/2 sticks of unsalted butter, softened
  • 1 cup of granulated sugar
  • 1/2 cup of packed brown sugar
  • 2 large eggs
  • 2 teaspoons of pure vanilla extract
  • 2 3/4 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • Colored sugar or sprinkles for decorating (optional)
  • Lollipop sticks or cake pop sticks
  • White chocolate or candy melts for dipping
  • Edible markers or eyes for decorating

Instructions

Preheat your oven to 375°F (190°C).

Line a baking sheet with parchment paper or a silicone mat.

In a large mixing bowl, cream together the softened butter and sugars until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

Divide the dough into 5 equal portions.

Roll each portion into a ball between your hands, then flatten slightly into a disk shape.

Place a lollipop stick or cake pop stick in the center of each disk, pressing the dough gently around the stick to secure it.

Place the cookie pops on the prepared baking sheet, leaving about 2 inches of space between each one.

Bake for 12-14 minutes or until the edges are lightly golden.

Let the cookie pops cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Once the cookie pops are completely cool, melt the white chocolate or candy melts in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.

Dip the top of each cookie pop into the melted chocolate, using a spatula or spoon to fully coat.

If desired, decorate the cookie pops with colored sugar, sprinkles, or edible markers before the chocolate hardens.

Let the chocolate set and harden completely before serving.

Notes

To get the best results, make sure your butter is at room temperature and super soft. That way, it’ll cream beautifully with the sugars.

Also, don’t overmix the dough or your cookies might turn out tough.

If you find the dough too sticky, add a little more flour. If it’s too dry, add a teensy bit more butter.
