- 1 1/2 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup crushed cookies (such as chocolate sandwich cookies or peanut butter cookies)
- 1/2 cup chopped walnuts (optional)
- 1/4 cup confectioners’ sugar
Instructions
Preheat your oven to 350°F (180°C).
Line a 12-inch pizza pan or a round baking stone with parchment paper.
In a medium bowl, whisk together the flour, brown sugar, granulated sugar, baking soda, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together the butter and sugars until light and fluffy, about 2-3 minutes.
Beat in the egg and vanilla extract until well combined.
Gradually mix in the flour mixture until just combined, being careful not to overmix.
Stir in the chocolate chips, crushed cookies, and chopped walnuts (if using).
Press the dough evenly into the prepared pizza pan or baking stone.
Bake for 20-25 minutes, or until the edges are lightly golden brown.
Remove from the oven and let cool completely in the pan.
Dust with confectioners’ sugar before slicing into 6 wedges and serving.
Notes
Use a high-quality cocoa powder for a richer flavor and darker color. Make sure to press the dough evenly into the pizza pan to ensure the cookie pizza cooks uniformly.
For an extra crunchy crust, bake the cookie pizza for an additional 2-3 minutes.
