- For Irish cream frosting:
- Unsalted butter, 1 cup
- Confectioners’ sugar, 2 cups
- Irish cream liqueur, 2 tablespoons
- Heavy cream, 2 tablespoons
- Salt, 1/4 teaspoon
Instructions
Preheat your oven to 350°F (180°C) and line a 12-cup muffin tin with cupcake liners. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
Set aside.
In a large bowl, whisk together the Guinness stout, milk, eggs, oil, and vanilla extract. Gradually add the dry ingredients to the wet ingredients, whisking until smooth.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let the cupcakes cool completely in the pan.
For the frosting, beat the butter in a large bowl until creamy.
Gradually add the confectioners’ sugar, beating until smooth and creamy. Add the Irish cream liqueur, heavy cream, and salt, beating until combined.
Once the cupcakes are completely cool, frost each cupcake with the Irish cream frosting.
