Cappuccino Brownies

Ingredients
- 1 and 1/2 sticks of unsalted butter, plus more for greasing the pan
- 1 cup of sugar
- 4 large eggs
- 1/2 cup of unsweetened cocoa powder
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1 and 1/4 cups of all-purpose flour
- 1 cup of semi-sweet chocolate chips
- 1 cup of strong brewed coffee
- 1 teaspoon of instant coffee powder
- Espresso beans or chocolate shavings for garnish, optional
Instructions
Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan with butter, then line it with parchment paper. Melt the butter and sugar in a medium saucepan over low heat, stirring occasionally, until the butter is melted and the sugar is dissolved.
Remove from heat and stir in the cocoa powder until it’s well combined.
Let it cool slightly. Stir in the eggs one at a time, followed by the vanilla extract and salt.
Add the flour and stir until just combined, being careful not to overmix.
Melt the chocolate chips in the microwave in 30-second increments, stirring between each interval, until smooth. Allow it to cool slightly.
Stir the brewed coffee and instant coffee powder into the chocolate mixture until well combined.
Pour the chocolate mixture into the saucepan with the cocoa mixture and stir until smooth. Pour the batter into the prepared baking pan and smooth the top.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
Let the brownies cool completely in the pan before cutting into 6 squares and garnishing with espresso beans or chocolate shavings, if desired.
Notes
Make sure to use high-quality chocolate for the best flavor. If you don’t have strong brewed coffee, you can use 2 tablespoons of instant coffee powder mixed with 1 cup of hot water as a substitute.
Don’t overmix the batter, as it can result in dense brownies.
To ensure the brownies are fudgy, don’t overbake – a toothpick inserted into the center should have a few moist crumbs attached. If you’re using espresso beans or chocolate shavings for garnish, sprinkle them on top of the brownies just before serving, as they can get soggy if added too far in advance.
For a more intense coffee flavor, you can increase the amount of brewed coffee or instant coffee powder to your taste.
