  • 2 ripe avocados, mashed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans

Instructions

Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan with non-stick cooking spray or oil. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

Set aside.

In a large bowl, use an electric mixer to cream together sugar and softened butter until light and fluffy. Add the mashed avocados and mix until well combined.

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
