Yields
6 servings
Ingredients
- 2 ripe avocados, mashed
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup chopped pecans
Instructions
Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan with non-stick cooking spray or oil. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together sugar and softened butter until light and fluffy. Add the mashed avocados and mix until well combined.
Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
Add the vanilla extract and mix well. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Do not overmix.
Stir in chopped walnuts and pecans. Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve!
Notes
Use ripe avocados for the best flavor and texture. If your avocados are not ripe, you can speed up the ripening process by placing them in a brown paper bag with an apple.
Make sure to grease the loaf pan properly to prevent the bread from sticking.
Don’t overmix the batter, as this can result in a dense bread. You can toast the walnuts and pecans in a 350°F oven for 5-7 minutes to bring out their flavor and aroma, but be careful not to burn them.
If you’re not a fan of nuts, you can reduce the amount or omit them altogether.
This bread is perfect for breakfast or as a snack, and it’s also a great base for French toast or bread pudding. Store any leftovers in an airtight container at room temperature for up to 3 days.
