  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup plain Greek yogurt
  • 2 cups diced apples (about 2 medium-sized apples)
  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon

Instructions

Preheat your oven to 350°F (180°C) and grease a 9×13-inch baking dish. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Set it aside.

In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

Add the flour mixture to the wet ingredients and mix until just combined.

Do not overmix. In a separate bowl, whisk together the Greek yogurt and 1 tablespoon of water.

Add this mixture to the batter and mix until smooth.

Add the diced apples to the batter and gently fold until they’re evenly distributed. In a separate bowl, mix together the brown sugar, chopped walnuts, rolled oats, and cinnamon.

Use your fingers or a pastry blender to work the mixture until it resembles coarse crumbs.

Pour the batter into the prepared baking dish and top with the streusel topping. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and let cool for 10-15 minutes before slicing and serving.

Notes

To ensure the streusel topping stays crumbly, don’t overmix the brown sugar, chopped walnuts, rolled oats, and cinnamon mixture. A few larger crumbs are okay, as they’ll add nice texture to the cake.

When preparing the apples, try to use a variety that holds its shape during baking, like Granny Smith or Honeycrisp.

Avoid overmixing the batter when adding the apples, as it can make the cake dense. Don’t open the oven door during the baking time, or the cake might sink.

If you’re unsure if it’s done, insert a toothpick in the center – if it comes out clean, it’s ready! If not, bake for an additional 5-10 minutes and check again.

This cake is perfect for a weekend brunch or a breakfast potluck, as it’s best served warm, straight from the oven. You can also wrap individual slices tightly and freeze for up to 2 months, thawing and reheating as needed.
