Apple Dapple Cake

Ingredients
- 2 large apples, peeled and diced
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch (23cm) round cake pan.
In a medium-sized bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
Set aside.
In a large bowl, use an electric mixer to cream together the butter and eggs until light and fluffy.
Add the vanilla extract to the butter mixture and mix until well combined.
Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Do not overmix.
Fold in the diced apples and chopped walnuts (if using) into the batter until they’re evenly distributed.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Slice and serve!
Notes
Use fresh and ripe apples for the best flavor and texture. If using walnuts, be gentle when folding them into the batter to avoid breaking.
Don’t overmix the batter, as it can result in a dense cake.
If you don’t have an electric mixer, you can cream the butter and eggs together by hand, but it might take some elbow grease! For an extra crispy top, bake the cake for 5-7 minutes more, keeping an eye on it to avoid burning. This cake is perfect for a brunch or afternoon gathering, and can be served with a scoop of vanilla ice cream or whipped cream for an added treat.
Cake will keep at room temperature for up to 3 days, or wrap tightly and freeze for up to 2 months.
