Air Fryer Fish And Sweet Potato Chips

- 4 large fish fillets (about 6 ounces each)
- 2 large sweet potatoes, peeled
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Optional: lemon wedges and tartar sauce for serving
Instructions
Preheat the air fryer to 400°F (200°C). Cut the sweet potatoes into long, thin strips, about 1/2 inch thick.
Rinse the strips in cold water, pat dry with paper towels to remove excess moisture.
In a large bowl, mix together the flour, paprika, garlic powder, salt, and pepper. Dip each sweet potato strip into the flour mixture, coating both sides evenly.
Dip the floured sweet potato strip into the panko breadcrumbs, pressing the crumbs onto the potato to ensure they stick.
Line the air fryer basket with parchment paper. Arrange the sweet potato strips in a single layer, leaving some space between each strip for even cooking.
Cook the sweet potato strips in batches, if necessary, for about 10-12 minutes or until crispy and golden brown.
Shake the basket halfway through the cooking time. Meanwhile, cut the fish fillets into strips, about 1 inch wide.
Season with salt and pepper to taste.
Dip each fish strip into the flour mixture, coating both sides evenly. Dip the floured fish strip into the panko breadcrumbs, pressing the crumbs onto the fish to ensure they stick.
Line the air fryer basket with parchment paper.
Arrange the fish strips in a single layer, leaving some space between each strip for even cooking. Cook the fish strips in batches, if necessary, for about 8-10 minutes or until cooked through and flaky.
Serve the air-fried fish with the sweet potato chips, with lemon wedges and tartar sauce on the side, if desired.
Notes
For a crisper sweet potato chip, try to dry the strips as much as possible before coating and cooking. You can also soak the strips in cold water for 30 minutes to remove excess starch before drying and cooking.
Make sure to not overcrowd the air fryer basket, as this can prevent the fish and sweet potato strips from cooking evenly.
Cooking in batches might take a little more time, but it’s worth it for that perfect crispiness. If you want an extra crunchy coating on your fish, you can chill it in the refrigerator for 30 minutes before cooking to set the breadcrumbs.
Keep an eye on the cooking time, as fish cook times may vary depending on the thickness of the fillets.
Adjust the cooking time as needed to ensure the fish is cooked through and flaky. For an extra crispy sweet potato chip, you can try cooking them at a higher temperature (420°F) for a shorter amount of time (8-10 minutes).
