Ingredients

  • all-purpose flour 1 1/2 cups
  • unsalted butter, softened 1/2 cup
  • granulated sugar 1/2 cup
  • confectioners’ sugar 2 tablespoons
  • large egg 1
  • salt 1/4 teaspoon
  • almond extract 1/2 teaspoon
  • fresh raspberries or strawberries for garnish

Instructions

Preheat your oven to 325°F (165°C).

Line a baking sheet with parchment paper or a silicone mat.

In a medium-sized bowl, whisk together the flour and salt.

Set aside.

In a large bowl, use an electric mixer to cream together the butter and granulated sugar until light and fluffy, about 2-3 minutes.

Gradually mix in the confectioners’ sugar until well combined.

Beat in the egg until smooth, followed by the almond extract.

Gradually add the flour mixture to the wet ingredients and mix until a dough forms.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness.

Cut out small squares, about 2 inches per side.

Place the squares on the prepared baking sheet, leaving about 1 inch of space between each tart.

Bake for 18-20 minutes, or until lightly golden around the edges.

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Just before serving, garnish with fresh raspberries or strawberries.

Notes

Make sure to chill the dough for at least 30 minutes to ensure the butter is firm and the dough is easy to roll out. If you find the dough too sticky, add a little more flour.

Alternatively, if it’s too dry, add a small amount of softened butter.

Use a light hand when rolling out the dough to prevent it from becoming too thin and fragile. You can also use a cookie cutter to cut out fun shapes instead of squares.

Keep an eye on the tarts while they’re baking, as they can go from perfectly golden to burnt quickly.
