Sweet Potato Boats With Gooey Cheese
Sweet potatoes transform into the ultimate comfort food when paired with gooey cheese! This show-stopping side dish is incredibly easy to make and is sure to be a hit at any gathering.
Simply bake sweet potatoes until tender, scoop out the flesh, and fill them with a mix of melted mozzarella and cheddar cheese.

Ingredients
- 5 large sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
- 1 tablespoon butter, softened
Instructions
Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and dry them with a paper towel.
Poke some holes in each sweet potato with a fork to allow steam to escape.
Rub them with olive oil and sprinkle with salt and pepper. Place the sweet potatoes directly on the middle rack of the oven and bake for 45-50 minutes, or until they’re tender when pierced with a fork.
While the sweet potatoes are baking, mix the mozzarella and cheddar cheese in a bowl.
Add the chopped parsley and mix well. Remove the sweet potatoes from the oven and let them cool for a few minutes.
Slice them in half lengthwise and scoop out some of the flesh to make room for the cheese mixture.
Divide the cheese mixture evenly among the sweet potatoes, spooning it into the hollowed-out centers. Top each sweet potato with a pat of softened butter.
Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove the sweet potatoes from the oven and let them cool for a few minutes before serving. You should end up with 10 delicious sweet potato boats oozing with gooey cheese!
Notes
For the best results, use high-quality mozzarella and cheddar cheese for an extra rich and creamy flavor. Don’t overmix the cheese and parsley mixture, you want to maintain a nice texture.
Make sure to scoop out enough of the sweet potato flesh to make room for the cheese mixture, but not so much that the boats become too fragile.
If you want an extra crispy top, broil the sweet potatoes for an additional 2-3 minutes after the cheese is melted and bubbly. Be careful not to burn yourself when handling the hot sweet potatoes.
You can also customize the recipe by adding some diced ham or bacon to the cheese mixture for added smokiness.
To make ahead, bake the sweet potatoes and prepare the cheese mixture, then assemble and bake just before serving.
