- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 3 tablespoons olive oil
- 1 teaspoon salt
- 3 1/2 cups all-purpose flour
- 1 cup grated cheddar cheese
- 1/2 cup grated Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- 2-3 diced jalapeno peppers
- 1 large egg, beaten
Instructions
Combine warm water, sugar, and yeast in a large mixing bowl, stirring gently to dissolve yeast.
Let mixture sit for 5-10 minutes, or until yeast is activated and foamy.
Add olive oil, salt, and 2 cups of flour to the bowl, mixing until a shaggy dough forms.
Gradually add remaining flour, 1/2 cup at a time, until dough becomes smooth and elastic, about 5-7 minutes.
Knead dough on a floured surface for 5-7 minutes, until smooth and elastic.
Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm, draft-free place for 1 hour, or until doubled in size.
Preheat oven to 375°F (190°C).
Punch down dough and roll into a rectangle, about 1/4-inch thick.
In a small bowl, mix cheddar and Monterey Jack cheese.
Sprinkle cheese mixture evenly over dough, leaving a 1-inch border around edges.
Sprinkle cilantro, diced jalapenos, and a pinch of salt over cheese.
Roll dough into a tight log, starting from the long side.
Cut log into 5 equal pieces.
Place rolls, seam-side down, on a baking sheet lined with parchment paper.
Brush tops with beaten egg and sprinkle with a pinch of salt.
Bake for 18-20 minutes, or until golden brown.
Notes
Make sure your yeast is fresh and not past its expiration date, as this can affect the rising process.
Use high-quality cheeses for the best flavor, and don’t be shy about adding more or less jalapeno peppers depending on your desired level of heat.
If you want a crisper crust, bake the rolls for an additional 2-3 minutes.
Keep an eye on them to avoid overcooking.
To freeze, place the unbaked rolls on a baking sheet, and once frozen, transfer them to an airtight container or bag.
Bake frozen rolls for an additional 5-7 minutes.
