- 4 large eggs

Instructions
Crack the eggs into a large bowl and whisk them together with a pinch of salt and pepper until they’re well-beaten.
Set aside.
In a large skillet, melt 1 tablespoon of butter over medium heat.
Add the diced bell peppers, onions, and mushrooms.
Cook until the vegetables are tender, about 5 minutes.

Once melted, pour in the egg mixture.
