Ingredients
- 1 cup diced fresh watermelon (about 1 small to medium-sized watermelon)
- 1/2 cup cooked and flaked fish (such as tilapia, cod or mahi-mahi)
- 1/4 cup chopped fresh mint leaves
- 1/4 cup crumbled feta cheese (optional)
- 1 tablespoon freshly squeezed lime juice
- Salt to taste
Instructions
Start by preparing your watermelon.
Cut it into small cubes, making sure they’re all roughly the same size so they’re easy to pair up later.
You’ll need about 1 cup of diced watermelon.
In a medium-sized bowl, combine the diced watermelon, cooked and flaked fish, chopped fresh mint leaves, and crumbled feta cheese (if using).
Be gentle so you don’t mash the watermelon or break up the fish.
Squeeze the freshly squeezed lime juice over the top of the mixture and toss gently to coat.
Season with salt to taste.
You may want to add a bit more or less depending on your personal preference.
