Ready Time

35 mins

Yields

6 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups mixed mushrooms (such as cremini, shiitake, and button), sliced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 2 tablespoons vegan butter or margarine

Instructions

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and sauté for about 5 minutes, until softened.

Add the minced garlic and cook for an additional minute, until fragrant.

Add the sliced mushrooms to the skillet and cook for about 5 minutes, until they release their liquid and start to brown.

Add the dried thyme, rosemary, sage, salt, and pepper, and stir to combine.

Cook for an additional 1-2 minutes, until the mushrooms are coated in the herb mixture.

Sprinkle the all-purpose flour over the mushroom mixture and stir to combine.

Cook for 1-2 minutes, until the flour is lightly toasted.

Gradually pour in the vegetable broth, whisking continuously to avoid lumps.

Bring the mixture to a simmer and cook for about 5 minutes, until the gravy thickens.

Remove the skillet from the heat and stir in the vegan butter or margarine, until melted and smooth.

Serve hot over your favorite dish!

Notes

Use a high-quality vegetable broth for the best flavor, as it’s the base of the gravy.

You can also use homemade broth or stock if you have some on hand.

Make sure to not overcook the mushrooms, as they can become tough and rubbery.

Five minutes is the perfect amount of time to get them tender and lightly browned.

If you’re using vegan butter or margarine, make sure to choose a high-quality brand that melts well and has a good flavor.

This will make a big difference in the final taste of the gravy.

You can also customize this recipe to your taste by adding different herbs or spices.

For example, a pinch of nutmeg or a sprinkle of paprika can add a nice depth of flavor.

Leftover gravy can be refrigerated for up to a week or frozen for up to 3 months.

Simply reheat it over low heat, whisking constantly, until warmed through.
