Instructions
In a large bowl, combine quinoa, mixed greens, cherry tomatoes, cucumber, and carrots. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the quinoa mixture and toss to combine.
