Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups hulled and sliced strawberries
- 1/4 cup chopped fresh mint leaves
Instructions
Preheat your oven to 350°F (180°C).
Grease a 9×5-inch loaf pan and set it aside.
In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together sugar and butter until light and fluffy, about 2-3 minutes.
Beat in eggs one at a time, followed by vanilla extract.
Gradually mix in the flour mixture until just combined, being careful not to overmix.
Gently fold in sliced strawberries and chopped mint leaves.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
Make sure to use room temperature eggs for better incorporation.
