Stovetop Omelette
This stovetop omelette is a flavorful and filling breakfast or brunch option, packed with sautéed bell peppers, onions, and mushrooms, and melted cheddar cheese.
With a few simple ingredients and easy steps, you’ll have a delicious and satisfying meal that’s perfect for a quick morning pick-me-up or lazy weekend treat.

Ingredients
- 4 large eggs
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced mushrooms
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
Crack the eggs into a large bowl and whisk them together with a pinch of salt and pepper until they’re well-beaten.
Set aside.
In a large skillet, melt 1 tablespoon of butter over medium heat.
Add the diced bell peppers, onions, and mushrooms.
Cook until the vegetables are tender, about 5 minutes.
Remove the vegetables from the skillet and set them aside.
In the same skillet, add the remaining 1 tablespoon of butter.
Once melted, pour in the egg mixture.
Let it cook for about 2-3 minutes, until the edges start to set.
Sprinkle the cooked vegetables and shredded cheddar cheese over half of the omelette.
Use a spatula to gently lift and fold the other half of the omelette to cover the filling.
Cook for an additional 30 seconds to a minute, until the cheese is melted and the eggs are cooked through.
Slide the omelette out of the skillet onto a large plate or cutting board.
Cut the omelette into 5 equal portions and serve hot.
Notes
Use any color bell peppers you like, or a combination for a rainbow effect! If using mushrooms, be sure to clean them gently with a damp cloth or paper towels to remove any dirt or debris.
For a spicy kick, add diced jalapeños or serrano peppers to the skillet with the vegetables.
If you’re not a fan of cheddar, feel free to substitute with another shredded cheese like mozzarella, Monterey Jack, or even feta.
Since this recipe yields 5 portions, consider halving the ingredients for a smaller crowd or multiplying them for a larger group.
