  • 2 1/4 cups heavy cream, 1 1/2 cups whole milk, 1/2 cup granulated sugar, 1/4 cup corn syrup, 1 tsp kosher salt, 1/2 cup sriracha sauce, 2 tbsp freshly squeezed lime juice, 1 tsp vanilla extract

Instructions

Combine the heavy cream, whole milk, granulated sugar, corn syrup, and kosher salt in a medium saucepan.

Whisk until the sugar has dissolved, then cook over medium heat, stirring occasionally, until the mixture comes to a simmer.

Remove the saucepan from the heat and stir in the sriracha sauce, lime juice, and vanilla extract.

Let the mixture steep for at least 30 minutes to allow the flavors to meld.

Strain the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Once the ice cream is nearly fully churned, transfer it to an airtight container and cover it with plastic wrap or aluminum foil.

Place the container in the freezer to harden for at least 2 hours.

Once the ice cream has hardened, scoop it into cones or bowls and serve immediately.

You should end up with about 9 scoops of creamy, spicy goodness!
