Ready Time
40 mins
Yields
7 servings
Ingredients
- 1 1/2 pounds firm white fish (such as mahi-mahi, halibut, or tilapia), cut into small pieces
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 7 corn tortillas
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow onion
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup chopped fresh cilantro
- Sliced radishes, for garnish
- Sour cream or Greek yogurt, for serving (optional)
Instructions
In a large bowl, whisk together lime juice, olive oil, garlic, oregano, cumin, cayenne pepper, paprika, salt, and pepper. Add the fish pieces to the marinade, making sure they are coated evenly.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
Preheat a grill or grill pan to medium-high heat. Remove the fish from the marinade, letting any excess liquid drip off.
Grill the fish for 3-4 minutes per side, or until it’s cooked through and flakes easily with a fork.
While the fish is cooking, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Grill or sauté the diced red bell pepper and yellow onion until tender, about 3-4 minutes.
Assemble the tacos by placing a piece of grilled fish onto a warmed tortilla, then topping with sautéed peppers and onions, chopped jalapeño, and a sprinkle of cilantro.
Serve with radishes on the side and a dollop of sour cream or Greek yogurt, if desired.
Notes
Fish: Make sure to pat the fish dry with paper towels before marinating to remove excess moisture, which helps the marinade penetrate better.
Marinade: If you’re short on time, you can marinate the fish for at least 15 minutes, but the longer it sits, the more flavorful it’ll be.
Grilling: If you don’t have a grill, don’t worry! You can cook the fish in a hot skillet on the stovetop for about 4-5 minutes per side, or until it’s cooked through.
Tortillas: Warm tortillas will make a huge difference in the overall texture and taste of your tacos.
Don’t skip this step! Veggies: Feel free to customize your taco toppings with your favorite veggies.
Grilled or sautéed mushrooms, diced tomatoes, or shredded lettuce would all be great additions.
Heat level: If you’re not a fan of spice, reduce or omit the cayenne pepper from the marinade.
If you like it extra spicy, add more!
