  • 1 pound large shrimp, peeled and deveined

  • 1 cup grated mozzarella cheese

Instructions

Preheat your oven to 375°F (190°C). Cook the macaroni according to the package instructions until al dente, then set aside.

In a large skillet, melt the butter over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Add the shrimp to the skillet and cook until pink and fully cooked, about 2-3 minutes per side.

Remove the shrimp from the skillet and set aside. In the same skillet, add the flour and whisk together to make a roux, cooking for 1 minute.

Slowly pour in the heavy cream and whole milk, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook until thickened, about 5 minutes. Remove the skillet from the heat and stir in the cheddar, mozzarella, and Parmesan cheese until melted and smooth.

Add the cooked macaroni, shrimp, salt, and pepper to the cheese sauce and stir until well combined.

Transfer the macaroni mixture to a 9×13 inch baking dish and top with additional grated cheese if desired. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the macaroni is heated through.

Sprinkle with chopped parsley if desired and serve hot.
