Romaine Salad With Oranges And Radishes

A light, zesty dressing and toasted pecans add the perfect finishing touches to this refreshing, healthy salad that’s sure to become a new favorite.

Ingredients
- 4 cups romaine lettuce, chopped
- 1 large navel orange, peeled and segmented
- 2 large radishes, thinly sliced
- 1/4 cup crumbled blue cheese
- 1/4 cup chopped pecans
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
In a large bowl, combine the chopped romaine lettuce, orange segments, and thinly sliced radishes.
In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
Toss the salad with the dressing until everything is well coated.
Sprinkle the crumbled blue cheese and chopped pecans over the top of the salad.
Toss gently to combine.
Serve immediately and divide among four plates.
Notes
Use the freshest romaine lettuce you can find for the best flavor and texture.
You can also toast the pecans in a 350°F oven for 5-7 minutes, or until fragrant, to bring out their flavor.
If you’re not a fan of blue cheese, you can substitute with feta or goat cheese.
Don’t overdress the salad, as the oranges will release their juice and create a nice dressing of their own.
Consider using blood oranges for a pop of color and a slightly sweeter flavor.
Let the salad sit at room temperature for 30 minutes before serving to allow the flavors to meld together.
