Ingredients
- For the Ranch Rubbed Carne Asada:
- 2 pounds flank steak
- 2 tablespoons olive oil
- 2 tablespoons ranch seasoning
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Avocado Crema:
- 4 ripe avocados
- 1/2 cup sour cream
- 1 tablespoon freshly squeezed lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Radish And Lime:
- 4 large radishes, thinly sliced
- 2 limes, cut into wedges
- Salt, to taste
- For the Tacos:
- 8 corn tortillas
- Chopped fresh cilantro, for garnish
Instructions
Preheat your grill to medium-high heat. In a small bowl, mix together olive oil, ranch seasoning, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Rub the mixture all over the flank steak, making sure to coat it evenly.
Let it sit at room temperature for 30 minutes. Grill the steak for 5-7 minutes per side, or until it reaches your desired level of doneness.
Let the steak rest for 10 minutes before slicing it thinly against the grain.
In a blender or food processor, combine avocados, sour cream, lime juice, salt, and black pepper. Blend until smooth and creamy.
Taste and adjust the seasoning as needed.
In a small bowl, toss together sliced radishes and a pinch of salt. Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
Assemble the tacos by slicing the grilled steak and placing it onto the tortillas.
Top with a dollop of avocado crema, some thinly sliced radish, a sprinkle of cilantro, and a squeeze of lime juice. Serve immediately and enjoy!
Notes
Ranch seasoning can be substituted with fajita seasoning if you prefer a more traditional Carne Asada flavor. If you don’t have smoked paprika, you can omit it or substitute with regular paprika.
For the Avocado Crema, make sure to use ripe avocados for the best flavor and texture.
If you’re not using it immediately, press plastic wrap directly onto the surface of the crema to prevent browning. If you don’t have a grill, you can cook the steak in a hot skillet on the stovetop or in the oven.
Just adjust the cooking time and method according to your preference.
For the radishes, you can adjust the amount of salt to taste. Also, feel free to add some chopped cilantro or scallions to the radish mixture for extra flavor.
You can assemble the tacos ahead of time, but it’s best to add the avocado crema and radishes just before serving to preserve their texture and flavor.
