Ingredients
- 1 1/2 cups warm water
- 2 teaspoons active dry yeast
- 3 tablespoons sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup caramelized onions (see note)
- 1/2 cup crumbled blue cheese
- 6 slices of cooked bacon, crumbled
- 1 egg, beaten
- 1 tablespoon chopped fresh parsley
Instructions
In a large mixing bowl, combine warm water and yeast.
Let it sit for 5-10 minutes until yeast is activated and frothy.
Add sugar, flour, and salt to the bowl.
Mix until a shaggy dough forms.
Add in melted butter and mix until dough comes together in a sticky ball.
Knead the dough on a floured surface for 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
Preheat oven to 350F.
Punch down the dough and transfer it to a floured surface.
Roll out the dough into a rectangle, about 1/4-inch thick.
Spread caramelized onions, crumbled blue cheese, and crumbled bacon evenly over the dough, leaving a 1-inch border around the edges.
Roll the dough into a tight log, starting from the long side.
Cut the log into 10 equal pieces.
Place each piece in a greased muffin tin.
Cover with plastic wrap and let it rise for another 30 minutes.
Brush the tops with beaten egg and sprinkle with chopped parsley.
Bake for 18-20 minutes or until golden brown.
Remove from the oven and let it cool for 5 minutes before serving.
Notes
To make the caramelized onions, cook 1 large onion in 2 tablespoons of olive oil over medium-low heat for 30-40 minutes, stirring occasionally, until deep golden brown and caramelized.
Let it cool completely before using.
If you want a stronger onion flavor, you can use 3/4 cup of caramelized onions or even more to your liking.
For an extra crispy crust, bake the bread for an additional 2-3 minutes, keeping an eye on it to avoid over-browning.
If you’re short on time, you can use store-bought caramelized onions or even sautéed onions as a substitute.
To make ahead, prepare the dough up to the rising stage, then refrigerate or freeze it for up to 2 days or 2 months, respectively.
Thaw frozen dough overnight in the refrigerator or at room temperature for a few hours before proceeding with the recipe.
For a more intense blue cheese flavor, use a stronger variety like Roquefort or Gorgonzola.
