Ingredients
- Peanut butter 1 cup
- Confectioners’ sugar 1 1/2 cups
- Graham cracker crumbs 1/4 cup
- Milk 2 tablespoons
- Powdered sugar 1/4 cup
- Chocolate chips 1 cup
Instructions
In a large mixing bowl, cream together the peanut butter and confectioners’ sugar until smooth and well combined.
Add the graham cracker crumbs to the peanut butter mixture and mix until a dough forms.
Gradually add the milk to the dough and mix until it’s well incorporated.
Cover the dough and refrigerate for at least 30 minutes to set.
Once set, use a cookie scoop or your hands to shape the dough into small balls, about 1 inch in diameter.
You should end up with around 16-20 balls.
Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
Dip each peanut butter ball into the melted chocolate, using a fork or dipping tool to fully coat the ball.
Place the chocolate-covered peanut butter drops on a parchment-lined baking sheet.
Refrigerate for at least 30 minutes to let the chocolate set.
Once set, serve the peanut butter drops chilled and powdered with a light dusting of powdered sugar.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
Make sure to use creamy peanut butter for the best flavor and texture. If using natural peanut butter, mix it well before measuring to incorporate any oil that has separated.
Confectioners’ sugar helps balance the richness of peanut butter, so don’t skip it! If you find the dough too sticky, add a bit more confectioners’ sugar.
Graham cracker crumbs add a delightful crunch, but you can substitute with crushed nuts if you prefer. When adding milk, start with 1 tablespoon and add more as needed to achieve a smooth dough.
To ensure chocolate sets properly, make sure the peanut butter balls are chilled before dipping.
If using a microwave to melt chocolate, be cautious not to overheat. For a decorative touch, drizzle melted chocolate over the peanut butter drops before serving.
