Ingredients
- 2 tablespoons creamy peanut butter
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon honey
- 1/4 cup rolled oats
- 1/4 cup creamy almond butter
- Pinch of salt
- 1/4 cup chocolate chips (semi-sweet or dark)
Instructions
In a medium-sized bowl, whisk together the peanut butter, unsweetened cocoa powder, and honey until smooth and creamy.
Add the rolled oats, almond butter, and a pinch of salt to the bowl.
Mix until well combined and a dough forms.
Fold in the chocolate chips until they are evenly distributed throughout the dough.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to set the dough.
Once set, use a cookie scoop or your hands to form the dough into 4 balls, about 1 inch in diameter each.
You can also shape them into bars or squares if you prefer.
Place the no-bake cookies on a parchment-lined baking sheet or a plate.
Refrigerate for an additional 15-20 minutes to firm up before serving.
Serve chilled and store any leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
You can customize the size and shape of your cookies to your liking, but keep in mind they might not hold their shape as well if they’re too thin. Make sure to use high-quality chocolate chips for the best flavor.
If the dough is too sticky, add a little more oats.
If it’s too dry, add a little more honey. These no-bake cookies are best consumed within a few days for optimal texture, but they’ll keep in the fridge for up to 5 days.
You can also roll the balls in crushed peanuts or shredded coconut for extra flavor and texture.
