Ingredients

  • 2 cups granulated sugar
  • 1 3/4 cups water
  • 2 lbs ripe peaches, peeled, pitted, and chopped
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp kosher salt

Instructions

Combine the sugar and water in a medium saucepan and place it over medium heat, stirring until the sugar dissolves. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 5 minutes.

Remove the syrup from the heat and let it cool to room temperature.

In a blender or food processor, puree the peaches, lemon juice, and salt until smooth. Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much juice as possible.

Discard the solids.

Add the cooled sugar syrup to the peach mixture and stir until well combined. Cover the bowl with plastic wrap and refrigerate until chilled, at least 2 hours or overnight.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Once the sorbet is frozen and scoopable, transfer it to an airtight container and place it in the freezer to harden for at least 2 hours. Scoop and serve.

Notes

Use ripe, sweet peaches for the best flavor.

Don’t over-blend the peach mixture or it’ll become too frothy.

Let the sugar syrup cool completely to prevent crystallization.

If you don’t have an ice cream maker, you can also freeze the mixture in a shallow metal pan and then blend it once it’s frozen solid.

For a more intense peach flavor, use 3 lbs of peaches.

You can also add a little almond extract or cinnamon to give the sorbet a unique twist.
