This is a classic recipe for oatmeal raisin cookies that has been passed down through the generations. The key to making these cookies perfect is in the oats – make sure to use old-fashioned rolled oats for a chewy cookie, or quick-cooking oats for a crispier cookie. Ingredients
- 1 cup raisins, 1 ¼ cups water, ⅔ cup butter, 1 cup brown sugar, 2 eggs, 1 cup rolled oats, 2 cups whole wheat flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, ½ teaspoon ground cloves, ½ teaspoon ground nutmegSalt to taste
Instructions
1. Preheat your oven to 350 degrees Fahrenheit.
2. In a small pot, boil the raisins in water for 2-3 minutes. Reserve the raisin water.
3. In a large bowl or mixer, cream together the butter and sugar until light and fluffy.
4. Add in the eggs, oatmeal, and 9 tablespoons of reserved raisin water. Mix well.
5. Add in the flour, baking soda, spices, and salt; mix until everything is well combined. Stir in the raisins lastly (folding them in).
6. Drop dough by rounded teaspoon onto an ungreased cookie sheet/baking tray; bake for 10-12 minutes or until lightly golden brown around edges (cookies will be soft).
